Corn on the Cob
6 tbsp Mayonnaise
6 tbsp Sour Cream
2 tbsp Lime Juice
4 tbsp Diced Cilantro
Cotija Cheese or Parmesan Cheese
Tajin Spice
Cooking Directions:
1. Place full Corn Cobs in a pot.
2. Fill with water until corn cobs are covered and cover the pot with a lid.
3. Place the pot on the stove and turn to medium-high heat to boil. (20 min. roughly)
4. Once the corn is boiled pour water out.
5. Place corn cobs on wooden sticks or corn cob holders. (Optional)
6. Use a medium-sized bowl to mix together the Mayo, Sour Cream, Lime Juice, and Diced Cilantro until all ingredients are thoroughly mixed together.
7. Shake a good amount of Cotija or Parmesan Cheese onto a plate.
8. Use a baster to spread the Mayo and Sour Cream mixture on all sides of a Corn Cob.
9. Roll the Corn Cob in the Cheese plate and thoroughly cover all sides of the corn with cheese.
10. Shake the Tajin Spice on the Corn Cob next over another empty plate to catch the excess spice that falls off the corn cob when you shake it.
11. Place the completed Corn Cob on a sheet pan and complete all other Corn Cobs.
