Ingredients:
1 ½ pound Brussels sprouts – trimmed and cut in half lengthwise
1 pack bacon
1 tbsp extra virgin olive oil
3 tbsp maple syrup
1 tsp kosher salt
1 tsp black pepper

Cooking Directions:
1. Preheat the oven to 400 degrees F.
2. Cut Brussel Sprouts in half and place in a medium-sized mixing bowl.
3. Cut the bacon into bite-sized pieces and place these in the mixing bowl.
4. Drizzle Olive Oil, Maple Syrup, Salt, and Pepper into the mixing bowl on top of the Brussel Sprouts and Bacon and toss to evenly coat.
5. Spray a baking sheet with non-stick cooking spray.
6. Place the Brussel Sprout and Bacon mixture on the baking sheet and spread everything out evenly. Be sure to turn the Brussel Sprouts facing down. (Cut side down.)
7. Bake for 20 to 30 minutes until the Brussels sprouts are lightly charred and crisp on the outside and tender in the center and the bacon is crisp. The outer leaves of the Brussels sprouts will be very dark too (this is the caramelized maple syrup; they taste amazing).
8. Watch carefully towards the end of the baking time, as the cooking time will vary based on the size of your sprouts.
9. Taste and season with additional salt and pepper as desired.
Enjoy hot.
10. Continue until all tortillas have been cooked and placed into the container to rest.
