Mexican Street Corn

Green Bean Ingredients:

Fresh Corn

½ cup Sour Cream

½ cup Mayonnaise

1 cup Parmesan Cheese (crumbled)

4 Cloves Garlic (crushed/finely minced)

½ tsp. Fine Sea Salt

Lime Juice & Zest (1 lime)

½ cup Cilantro (finely chopped)

1 tsp. Tajin


1 - Place fresh corn into a pot filled with water and boil the corn for 15-20 minutes.

2 - In a mixing bowl add in all the ingredients and mix thoroughly.

3 - Once corn has been boiled, drain the corn and set them on a plate to cool slightly.

4 - Place the corn in the mixing bowl and cover all sides of the corn with the mixture. Then place the covered corn in a dish. Complete this until each of the corn has been covered.

5 - Sprinkle additional Tajin and Parmesan Cheese on the corn as desired to taste.

6 - (Optional) Corn can be placed on a grill for 12 minutes at 400 degrees after they have been boiled to give them a grill flavor if desired. Cook on the grill turning the corn every 3 minutes to cook all sides. Then coat the corn after grilling as before.
